Original Mexican recipes with amaranth

This legendary and kind seed sprouted is eaten as cereal like pop, which is used to produce various foods (sweet honey, peanut butter, nuts, etc., and amaranth, a typical sweet of Mexico). You can also prepare delicious dishes such as muesli, tamales, cakes, tortillas, breads, porridges, smoothies, juice, cornmeal, milk shakes, puddings, marzipan, cookies, water, soups, stews, etc.

Amaranth is a product very complete. In it we find an important source of protein and vitamins how A, B , C , B1 , B2 , B3. It is rich in folic acid, and important minerals like calcium, iron and phosphorus. It is one of the richest foods in the presence of amino acids such as lysine.

Orange juice with amaranth

Restorative mood and great supply of fiber, chlorophyll and amino acids. Ideal for constipation if taken on an empty stomach.

Ingredients

  • 10 Sweet oranges
  • A cup of amaranth leaves (or germ )
  • 3 liters of water
  • brown sugar

Preparation

  1. Blend the leaves with the juice of oranges.
  2. Sweeten to taste.
  3. Serve cold.

Corn and amaranth soup

Serves: 4 people

Ingredients

  • 1/4 cup of oil
  • Two cups of amaranth leaves
  • 300 G. of Chopped zucchini
  • 2 corns shelled
  • 2 liters of water
  • 1/2 Kilo of red tomato or 2 cups of tomato puree
  • 1 Branch of epazote
  • 2 cloves of garlic
  • 1/2 onion slice
  • 1/2 cup of amaranth grain (or sprouted )

Preparation

  1. In a hot pan, mix oil, amaranth leaves and corn kernels.
  2. Add the tomato paste and tomatoes with garlic and onion previously smoothies, along with water and epazote.
  3. Cook the vegetables for 30 min.
  4. Decorate with manchego cheese or buttermilk and sprinkle some amaranth cereal.

Green Rice with Amaranth

Ingredients

  • 1/4 Of ricewashed and drained
  • 1/2 onion sliced
  • 2 cloves of garlic, minced
  • Two cups of amaranth leaves
  • 4 poblano chilies, roasted and deveined (optional )
  • 3 cups of chicken broth, vegetable broth (or water)
  • Salt
  • Oil, the necessary

Preparation

  1. In a skillet heat the oil and fry the rice with the onion and garlic.
  2. Apart puree the chiles with amaranth leaves in a little water. When the rice is transparent, drain the oil, add the chicken or vegetable broth and mix of chilies and leaves.
  3. Let the fire until the rice is fluffy and ready.

Soy, oats and amaranth beverage

This is a very complete food for breakfast in the morning, it is highly recommended especially for school children.

Ingredients

  • 2 liters of soy milk
  • 150 grams of amaranth flour
  • 50 grams of cereal amaranth
  • 150 grams of rolled oats
  • Cinnamon and sugar

Preparation

  1. Boil the milk with the cinnamon.
  2. Grind in a blender the oats, amaranth flour and cereal, with little cold water.
  3. When boiling milk flour was emptied, let simmer, stirring to prevent sticking .
  4. Sweeten to taste.

Amaranth Muffins

Ingredients

  • 50 grams of amaranth flour
  • 1/4 cup of flour
  • 2 Eggs
  • 2 tablespoons of butter
  • 1 tablespoon of baking powder
  • Soy milk (the necessary)

Preparation

  1. Sift the flour and baking powder.
  2. In a bowl add butter, eggs and soy milk.
  3. Beat perfectly well until no lumps.
  4. Grease a skillet and cook over low heat.
  5. Enjoy them with honey, jam, molasses or caramel

    Amaranth is wonderful and so so healthy, and I’m very glad to see that it’s starting to get more attention. I feel like with all of the new fad diets, there are so many off the wall alternatives, adn something so simple as amaranth just gets overlooked….
