Delicious recipes with Fish
Fish is one of the most popular foods in many cultures: Its consumption can be varied due to the large number of species found in individual dishes and each species can provide different textures and flavours and therefore is very versatile. Fish is also a great source of proteins, oils and vitamins.
If you want to exchange red meat with fish or like to prepare fish recipes, try these simple and delicious suggestions.
Halibut in orange sauce
Ingredients
- ¾ kg. of Halibut fillet
- 1 Lemon
- 2 oranges
- 4 tbsp. of Cream
- ¾ cup of white wine
- 2 egg yolks
- 1/4 tsp. of paprika
- 70g of Butter
- Flour (sufficient amount)
- 3 tbsp. of Chopped parsley
- Salt and Pepper (sufficient amount)
Preparation
- Wash and dry the fish fillets, season with salt and pepper and sprinkle with half of the lemon juice.
- Grate the orange peel, extract the orange juice and add the other half of the lemon juice.
- Mix the zest and lemon juice with the cream, white wine and egg yolks. Heat in a bain-marie until the mixture thickens. Season with salt, pepper and paprika.
- Combine with half the butter cut into small pieces and whisk until blended.
- Cover the fillets with flour and the remaining butter.
- Serve with the orange sauce and garnish with the orange pieces and some chopped parsley.
Galician sardine pie
Ingredients
- ¾kg of sardines
- 1 Onion
- 2 Peppers
- ½ cup of oil
- 2 tomatoes
- 1 tbsp. of parsley
- ¼ tsp. of saffron
- 1 tsp. of cayenne pepper
For the Dough:
- 3/4kg of flour
- 1 tbsp. of yeast
- 1 cup of warm water
- 2 tsp. of salt
Preparation
- Reserve one cup of flour and mix the rest gradually with the yeast, salt and warm water until fully integrated.
- Mix for about 5 minutes, kneading with the hands.
- Leave covered with a cloth or container and wait for it to rise to double its original volume.
- Clean and remove the bones from the sardines, then dry with paper towels and season with salt.
- Slice the onion and finely chop the peppers. Sauté in oil.
- Peel the tomatoes, chop and add to the sauce along with the parsley, saffron and paprika.
- Season with salt and pepper and set the sauce aside.
- Separate the dough into individual portions and spread it out.
- Place them on a baking sheet and place the sardine and fried vegetables filling on top.
- Cover with the other half of dough and varnish with oil.
- Bake at 200°C for 30 minutes or until golden brown.
Fish Meatballs
Ingredients
- 500g Fish
- 1 Tomato
- 1 clove of garlic (chopped)
- 1/2 an Onion (chopped)
- 1 tsp. of Chopped parsley
- 2 slices of bread
- 2 eggs
- 1 cup of Tomato Purée
- 1/2 cup of Fish stock
- 2 Poblano peppers
- 2 tbsp. of vinegar
- 1 tbsp. of oil
- Salt and Pepper (sufficient amount)
Preparation
- Flake the fish with a fork and make bread crumbs with the bread slices.
- Mix the fish, bread, vinegar, chopped onion and chopped garlic.
- Chop the tomatoes and remove the seeds.
- Add to the fish mixture along with the chopped parsley.
- Add the egg and season with salt and pepper, mix to form a thick paste.
- Form meatballs.
- Roast the poblano peppers after cleaning them and cutting them into strips.
- Mix the stock with the tomato puree.
- Add the meatballs and cook in the sauce for about 15 minutes.
