International Rice recipes

Rice is so important in China that the word rice means food. The Chinese consume 500 grams of rice daily, perhaps this is called "rice country". Of this cereal is derived the famous rice wine (sake), which in China is called "jing siew jao". Rice has been for centuries the staple of many countries, and this can be explained because of the excellent nutritional properties, and because it is a food that stands out, above all, to be very versatile in the kitchen.

There are many ways to prepare a good rice, either in stews, in salads, as a garnish for meat and fish or as a single dish, either in paella or other rice specialties, in fact you can use up in the dessert!

With it you can develop rice flour, pasta, sweets, vinegar and endless food. And, like all cereal, rice is rich in starch and calories, but low in protein. That's why it should not be considered a complete food. It is very useful in diets for both sick people to lose weight, since it is very easy to digest. Also suitable for many people with certain dietary problems, as it contains no cholesterol or gluten and is low in sodium, which makes it an excellent food for celiacs, people with cholesterol problems, etc.

The recipes below are recommended with organically grown rice or brown rice, which greatly increase the nutritional value of rice. If you choose brown rice, remember to soak overnight before cooking to soften.

White rice with lemon (China)

Yield: 2 people

Ingredients

  • 3 cups of water
  • 1 cup of rice
  • 1 tablespoon of lemon juice
  • 70g of butter

Preparation

  1. Place rice in a saucepan, water and lemon juice.
  2. Boil, stirring with a fork for about 15 minutes.
  3. Remove from heat and stir the beans again, quickly.
  4. Cover the pan and leave to park about 10 minutes.
  5. Uncover, season and mix with the butter, stirring until it is absorbed.
  6. This boiled rice is ideal for shaping

Dessert of rice and cinnamon pudding with chocolate (Mexico)

Yield: 3 to 4 people

Ingredients

  • 200 g of rice
  • 1/2 liter of milk
  • Half a cup of sugar
  • 1 big chocolate tablet
  • 6 eggs
  • 100 grams of butter
  • Cinnamon

Preparation

  1. Cook rice in milk well crushed.
  2. At the end, add sugar and grated chocolate.
  3. Let it dissolve.
  4. Let cool and mix with the yolks and whites whipped.
  5. Place the mixture into a baking dish, and cook with butter about ¾ of an hour.
  6. Serve as soon as removed from oven.

Salad garden with rice (Peru)

Yield: 3 to 4 people

Ingredients

  • 4 cups of previously cooked rice
  • A stick of celery
  • 1 cup of colored bell peppers , diced
  • 1 cup of mayonnaise (eggless mayonnaise if you cannot consume it with egg )
  • 100 grams of green and black olives
  • A teaspoon of mustard
  • Juice of 1 lemon
  • 2 tomatoes
  • 2 hard boiled eggs
  • Salt and pepper to taste

Preparation

  1. Place in a salad bowl cold cooked rice.
  2. Add the diced peppers.
  3. Add olives in pieces.
  4. Chop the celery and white attach it to the salad.
  5. Season with mustard, lemon juice, salt and pepper.
  6. Mix well with mayonnaise and put into refrigerator.
  7. Serve surrounding rice prepared with sliced boiled egg tomato and staggered.

Rice risotto with spinach

Ingredients

  • 400 g of rice
  • A pinch of saffron
  • 1 large onion
  • A half cup of raw spinach washed and chopped
  • A small pot of cream
  • 2 tablespoons of chopped parsley
  • 100 grams of grated cheese
  • 1 glass of white wine
  • 1 liter of vegetable stock
  • 2 tablespoons of olive oil

Preparation

  1. Chop onion and sauté in oil.
  2. Add rice and sauté.
  3. Scent it with wine and let it evaporate.
  4. Bathe with the broth and cook for fifteen minutes.
  5. Add the saffron previously diluted in a little broth.
  6. Add the chopped spinach and cream.
  7. Remove from heat, sprinkle with chopped parsley and grated cheese.

Rice with cheese (Cuba)

Yield: 2 people

Ingredients

  • 400 g of rice
  • 1 pinch of saffron
  • Half a cup of grated cheese
  • 2 tablespoons of olive oil or butter
  • Juice of 1 lemon
  • 4 Bananas
  • 4 thick slices of ham (can be soy ham )
  • 4 eggs
  • Oil for frying
  • Wholemeal
  • Salt to taste

Preparation

  1. Cook rice in salted water, about 18 minutes.
  2. Drain and mix with the grated cheese and butter (you can do without the butter and use olive oil).
  3. Take it for a minute to the oven to dry a bit and keep warm.
  4. Cut the bananas in half lengthwise, roll in flour and fry in oil.
  5. Go through the hot oil cooked ham slices.
  6. Fry four eggs.
  7. Each dish will be served a portion of rice, banana halves, ham and fried egg.
