Brown rice with vegetables

Ingredients

  • 350 grams of rice
  • ¾ gallons of water
  • 1 tablespoon of oil
  • 50 grams of peas
  • 50 grams of cauliflower
  • 50 grams of diced carrot
  • 2 diced tomatoes
  • ½ teaspoon of grated fresh ginger
  • 2 chopped green hot peppers
  • ½ teaspoon of turmeric powder
  • Sea salt

Proceeding

  1. Wash the rice. Soak 15 minutes and drain. Mash together ginger, chillies and turmeric. Brown in hot oil this aromatic paste and add the vegetables, fry for 2 to 3 minutes.
  2. Add rice, cook a few minutes and then pour the boiling water with salt. Boil one minute and then put the bag of spices hanging by a thread in the preparation. Cover and simmer until the rice absorbs all the water. Finally, remove the bag.

Potatoes with rosemary au gratin

Ingredients

  • 1 kilo of potatoes
  • 1 clove of garlic
  • rosemary
  • grated cheese
  • butter
  • olive oil

Preparation

  1. Cook the unpeeled potatoes, soak them in cold water to the top without salt. Remove when they are still somewhat intact, peel and hot crush slightly with the back of a fork. Add salt and pepper to taste.
  2. Heat a few tablespoons of oil and sauté together a clove of garlic and rosemary leaves.
  3. This sauce is added to the potatoes and put into a baking dish greased with butter, sprinkle with two tablespoons of grated cheese and is baked in the oven a few minutes.

Mushroom with garlic

Ingredients

  • 1 kg. of mushrooms
  • 4 or 5 cloves of garlic
  • Parsley, a good bunch
  • Cayenne, a tip
  • Olive Oil
  • Sea salt

Procedure

  1. First you must either cut all mushrooms already cleaned. In a skillet or casserole, put the garlic, cayenne and oil and leave everything while wiping all mushrooms, these are for the oil to aromatize.
  2. Separately wash and chop the parsley.
  3. It is time to put the fire at full power. Add salt and return to move again. You have to cook over a medium fire power until water is removed. Finally add the chopped parsley and bake for about three minutes over medium heat. You have avoid frying the mushrooms.

Gluten in peanut sauce

Ingredients

  • 400 g of gluten Milanese into strips

  • Vegetable broth powder
  • 1 pasilla chile fried and dipped in hot water
  • 1 ancho chile fried and dipped in hot water
  • 1 teaspoon of minced garlic
  • 1 / 4 chopped onion
  • 2 tablespoons of peanut cream

Procedure

  1. Guise gluten in oil with garlic and onion powder or salt broth. It should be slightly golden.
  2. Blend the chillies, garlic, onion. Guise in a little oil and season. Blend a little of this sauce with peanut butter, add the remaining sauce and cook a little more.

Tofu balls

Ingredients

  • 250 gr. oftofu
  • 300 gr of. fresh spinach
  • 1 onion
  • 2 cloves of garlic, minced
  • Almonds chopped
  • 1 red pepper
  • 20 ml. of soy sauce (tamari or shoyu)
  • 300 gr. of bread crumbs
  • Wholemeal and extra virgin olive oil
  • 1 tablespoon of thyme and oregano

Preparation

  1. Preheat oven placed in a tray while the pepper, onion, halved and unpeeled garlic cloves. Paint it all with olive oil and bake at 170 º C. After 20 minutes, remove the garlic, turn around and add the remaining chopped almonds. Leave it in the oven another 10 minutes.
  2. Then, peel the garlic and peppers to spend with the blender with boiling water, salt and pepper. Gently fry the onion, add the crumbled tofu, herbs and soy sauce, tofu when the absorbed, add the chopped spinach.
  3. After preparing the spinach, add the bread crumbs to the mixture until you can make balls with the dough.

    My diet has lost its magic, I?m vegetarian since a couple of years ago but now I?m getting tired of the same food, and well thanks a lot for all these recipes! They look delicious especially the one that is made with mushrooms! I love mushrooms so much I will enjoy that dish!

    I have been relatively vegetarian for a few years now (not that I am explicitly revoking the eating of meat…it just seems that in order to get all the vitamins and nutrients in one day, you need to eat primarily all fruits and vegetables), and I’m super excited to have read this article, I have a lot of new ideas for cooking now!
