Breakfast Recipes Without Lactose

Lactose is the sugar naturally found in the milk of animal origin (and its derivatives). When the body produces no (or low) of the enzyme called lactase, the lactose in milk cannot be digested, i.e. cannot be converted into energy in our body. This can cause many effects such as gas, abdominal distension and pain, diarrhea (after eating foods with lactose), and so on.

If this is your case, you should not worry because animal milk is not essential in the diet, many foods substitutes as much as to properties and nutritional elements, and are also very rich, suitable for preparing all type of food. Within these foods are soy milk, milk of almonds, rice, etc.. Below we share some recipes so you have variety in the lunch hour.

Donuts for lunch

Ingredients

  • 250 grams of whole flour
  • 100 grams of brown sugar
  • 4 eggs
  • 1 / 2 teaspoon of baking powder, lactose-free
  • 1 / 2 cup of anise
  • 1 teaspoon of aniseed
  • The skin of a lemon
  • 6 tablespoons of olive oil

Preparation

  1. Put six tablespoons of oil in a skillet and when it begins to be hot, incorporate lemon rind and leave it at low heat for ten minutes. Remove lemon rind and throw it. Put the pan away from heat and cool the oil.
  2. Then put the teaspoon aniseed, crushed in a mortar previously, in another skillet and fry in fire moving continuously.
  3. Beat three eggs with sugar until they are sparkling, add fried oil, the anise, aniseed and the cup of the flour. Mix everything well until a homogeneous dough. Slightly increases the amount of flour if necessary. Cover the bowl with a cloth and let the dough stand one hour in the refrigerator or a cool place.
  4. Grease your hands with oil and divide the dough into fourteen parts. Form balls with them, mash a little and make a hole in the middle to give the shape of donuts.
  5. Grease the oven tray and place the donuts oven so that they are separated from each other. Bat for the remaining egg and brush the donuts. Heat the oven and cook the donuts at half power until cooked and golden on the top. (You can brush more than once but I only brush once).

Almond Tart

Ingredients

  • 4 eggs
  • 200 gr. of brown sugar
  • 200 gr. of ground almonds
  • Amaranth, or sesameseeds to sprinkle

Preparation

  1. Beat well eggs, sugar until very fluffy, light-colored. It may be in blender.
  2. A hand, incorporate the almonds little by little.
  3. Preheat oven to bake at 175 º for 30 min. (approximately). Click to verify.
  4. Lubricate and when cool, sprinkle with sugar glass.

Cod fingers

Ingredients

Serves: 6 people

  1. 3 / 4 kilo of cod
  • 250 grams of whole flour
  • 2 eggs
  • 1 teaspoon of baking powder lactose free
  • Olive Oil
  • Salt

Preparation

  1. We must put the cod to soak for 24 hours and changing the water every 3 to 4 hours.
  2. Cut the cod into strips about 6-7 inches long and 2 wide in a colander and allow to release water.
  3. In a bowl put the flour and add eggs, 1 tablespoon of oil, yeast and mix everything together well, adding enough water to get a semi slurry.
  4. Add salt and let stand about 15 minutes.
  5. Put a fire deep skillet with plenty of oil and when hot, put strips of cod in the pan.
  6. When they are golden and crisp, remove from pan with a skimmer and drain oil on paper towel.
  7. Garnish with strips of bellpepper.

Torrijas

Ingredients

  • 1 bread type catheter
  • 1 liters of soy
  • 1 branch of sugarcane
  • 1 lemon rind
  • 6 tablespoons of brown sugar
  • Cinnamon and sugar
  • 4 eggs
  • Sunflower oil for frying

Preparation

  1. Cut bread in slices. Boil cinnamon with half a glass of water, when has reduced add the soy and lemon rind, boil a little. Add the sugar and remove from heat, allow to tune a little.
  2. Soak the bread in the soybean and boil until it before casting a bit soft and soggy (if this falls apart very tender), go through the beaten eggs and fry in oil alive.
  3. When gold was turned over to fry on the other side, remove to a plate and let drain on absorbent paper for a minute or two, add sugar mixed with cinnamon.

Biscuit

Preparation

  1. Whisk the eggs with the rods to approximately triple its size, add the sugar slowly and then the flour. Put into a mold greased with sunflower oil and flour.
  2. Cook to 180 degrees and the oven must be preheated.

Vegetarian ham croquettes

Ingredients

  • 1 / 2 L. of Soy
  • 200 g. of flour
  • Salt
  • Cubes of vegetarian ham
  • Onion
  • Olive oil
  • 2 eggs
  • Bread crumbs

Preparation

  1. Chop the onion and ham very fine. Skip the ham in a skillet with onion, remove from oil. In the same oil add 3 tablespoons of flour. And go adding roasted soybeans. Once as a cream, without having ceased to remove.
  2. Add ham and onion. Make a smooth sauce and remove from heat. Once the dough is cold,  make balls go through egg and breadcrumbs to tarnish. Fry in hot oil.

    Having lunch for our kids is difficult especially if we want it natural as many of the products we buy are bad and refined, and many of the bakery have milk, which prevent us from many of the ?delicious? products, but we have the choice of making them at home with our own guarantee, so thank you very much

    I don’t drink that much milk or eat very many dairy products (although I do really, really love cheese), and it’s really not that difficult to exclude lactose or dairy from your diet, at all. For breakfast I always eat steel cut oats with honey and some sort of berry, and it’s a fantastic breakfast, that’s filling and dairy-free.
