Are you tired of preparing the same salad recipes? Many times people say that they dislike vegetables because they're bored, but this does not mean they are not delicious, simply, we need to experience and learn more ways to prepare them. So here, I share a selection of delicious vegetable recipes.

Marinated mushrooms

Ingredients

for 4 servings

  • 500 grams of mushrooms without stems
  • ½ red pepper diced
  • ½ green pepper diced

Dressing:

  • 1 clove of pressed garlic
  • 1 tablespoon of polyunsaturated oil
  • 3 tablespoons of red wine vinegar
  • 1 tablespoon of finely chopped fresh parsley
  • 1 tablespoon of finely chopped chives
  • Freshly made black pepper

Preparation

Put in a bowl the mushrooms and peppers

To make the dressing:

In a jar, combine the garlic, oil, vinegar, parsley, chives and pepper. Shake all very well, and serve on the mushrooms and peppers. Cover and let marinate in the refrigerator for two hours.

Sautéed vegetables

Ingredients

for 6 servings

  • 1 tablespoon of polyunsaturated oil (olive)
  • 1 onion slice
  • 1 pressed garlic clove
  • 1 teaspoon of grated fresh ginger
  • 1 carrot, sliced very thinly
  • 1 green bell pepper slices
  • 2 stalks of sliced celery
  • 300 grams of sliced mushrooms
  • 100 grams of snow peas without the tips
  • ½ Shredded cabbage
  • 350 grams of baby corn in brine
  • 1 tablespoon of soy sauce low in salt

Preparation

  1. In a skillet or wok with hot oil, fry the onion, garlic and ginger for 2 or 3 minutes. Add carrots, bell pepper and celery, and cook everything for 4-5 minutes.
  2. Add mushrooms and green peas to the mix of vegetables. Fry for 1-2 minutes or until beans are tender. Add cabbage, baby corn and soy sauce, and cook for 3-4 minutes. Serve immediately.

Italian salad of green beans

Ingredients

for 4 servings

  • 500 grams of green beans, tips removed
  • 6 shallots finely chopped
  • 3 tomatoes, peeled and chopped
  • 8 black olives without seed
  • Ground black pepper

Dressing:

  • 1 tablespoon of olive oil
  • 3 tablespoons of lemon juice
  • 1 garlic clove, pressed
  • 1 tablespoon of finely chopped parsley
  • 1 tablespoon of finely chopped cilantro
  • 1 teaspoon of finely chopped fresh rosemary
  • 1 teaspoon of finely chopped thyme

Preparation

  1. Cook the green beans, steamed or in the microwave, until they are soft and rinse with cold water.
  2. In a salad bowl, arrange the green beans, shallots, tomatoes and olives.

To make the dressing:

In a jar, mix the oil, lemon juice, garlic, parsley, chives, rosemary and thyme. Shake and pour over salad. Season with pepper and stir.

Tomato and basil salad

Ingredients

for 6 people

  • 750 grams of ripe tomatoes, peeled and sliced
  • 4 tablespoons of finely chopped basil
  • 2 tablespoons of grated Parmesan cheese
  • Freshly ground black pepper

Dressing:

  • 1 garlic clove, pressed
  • 1 tablespoon of olive oil
  • 3 tablespoons of white wine vinegar
  • Add on a platter tomato and sprinkle basil.

To make the dressing:

Add the garlic, oil and vinegar in a jar. Shake and pour on the tomato. Before serving, sprinkle Parmesan cheese and pepper for seasoning, and that is it!

You can use these easy and practical recipes to include more vegetables in your diet, and you will not regret it. Do not limit yourself to the same salad every day; try new ways of preparing vegetables.

    I love preparing food with vegetables! But my family doesn?t like them very much. They prefer to eat meat in every single way! But today I?m gonna surprise them preparing one of this recipes! I think I?ll start with the Italian Salad. I?ll let you now the results

    A little while ago (well…about 2 years ago now…) I started to get very interested in Ayurveda medicine and “traditional” medicine. It really made me start to see health as coming first from food, more than anything else. I’ve started eating vegetables as my main meals, broccoli, brussel sprouts, sweet potatoes, and I’ve lost weight and feel great!
