Cranberry is a berry that tastes somewhat sour, which has been used for many purposes, both culinary and medicinal.
Currently, cranberries are used in natural medicine for the prevention and treatment of urinary tract infections. They are also rich in antioxidants, which fight the effects of free radicals in the body. Furthermore, they provide vitamins such as vitamin C and E as well as a good source of fibre, hence why it is a good idea to include them in your kitchen.

Avocado salad with cranberries

Ingredients

  • 1 avocado (sliced)
  • 1 mango (diced)
  • ¾ cup of dried cranberries
  • 100 grams of goat cheese (sliced)
  • 1 cup of alfalfa sprouts
  • Lettuce leaves
  • Black sesame seeds

For the vinaigrette

  • 4 tablespoons of wine vinegar
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 1 thinly sliced green onion

Preparation

  1. Place the lettuce leaves in a bowl. Add mango, cranberries and avocado and mix.
  2. Add the cheese, alfalfa sprouts and sprinkle with some black sesame seeds.
    For the vinaigrette, mix the ingredients in a bowl and then pour over the salad before serving.

Chicken with cranberry sauce

Ingredients

  • 4 chicken breasts, skinless, boneless and cut in half
  • 4 tablespoons of balsamic vinegar
  • 3 tablespoons of Worcestershire sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

For the sauce

  • 1 ½ cup of dried cranberries
  • 1 cup of apple juice
  • 1 chopped apple
  • 1 teaspoon of cinnamon
  • 1 pinch of ground ginger

Preparation

  1. Mix the Worcestershire sauce with vinegar in a bowl, then place the chicken in this mixture to marinade for 20 minutes. Season with salt and pepper to taste.
  2. Place the chicken on a grill until well roasted on both sides.
  3. Prepare the cranberry sauce by blending the apple juice with cranberries, cinnamon and ginger. Place the mixture in a saucepan until boiling. When boiling, add the apple slices and leave to cook for a few more minutes. Serve over the chicken.

Cranberry Cream with Cucumber

Ingredients

  • 1 cup of dried cranberries
  • 2 cucumbers , peeled and cored
  • 1 cup of plain yogurt
  • ¾ litre of chicken broth
  • 1/3 chopped onion
  • 2 cloves of garlic, peeled
  • 2 sprigs of mint
  • 1 cube of chicken stock
  • Olive oil
  • Salt and pepper to taste

Preparation

  1. Put two tablespoons of olive oil in a pan and heat, adding the onion, garlic and mint leaves, stirring well and sauteeing the onion.
  2. Add the bouillon cube and remove from the heat.
  3. In a blender, liquefy cucumbers with yogurt and cranberries.
  4. Add the onion mixture and a little chicken broth, as well as some salt and pepper to taste. Blend again until desired flavour is achieved.
  5. Serve the soup garnished with a handful of cranberries and some mint leaves.

Cranberry Jelly

Ingredients

  • 1 litre of cranberry juice
  • 2 oranges in pieces (no skins or pith)
  • ½ cup of dried cranberries
  • 3 tablespoons of gelatin
  • ½ cup of cold water
  • ½ teaspoon of ground ginger
  • 1 cinnamon stick
  • ½ cup of sugar

Preparation

  1. Hydrate the gelatin in cold water. Heat cranberry juice with sugar, cinnamon and ginger.
  2. When it begins to boil, remove the mixture from the heat and add the previously soaked gelatin.
  3. Mix until completely dissolved.
  4. Pour a quarter of the mixture into a jelly mold and distribute the cranberries, leaving it in the fridge until it solidifies. Place another quarter into the mold, this time including some slices of orange. Repeat the procedure, alternating between cranberries and orange to complete the preparation.
  5. Remove from the mold and serve.

    This is one of my favorite fruits for sure, the taste, the smell, just everything in this fruit is amazing, I think this is a perfect season to eat it with as many preparations as you can find, this is very good indeed and the recipes let me tell you that are very original and I like them a lot!

    I definitely loooove the recipes with berrys ! Here its so easy to buy them and also find them in the supermarkets . I had heard that they are good too for the skin and hair

    Hi , this is very useful to me ! My wife and kids love eating cranberries, but I dont like that much !its good to know some recipes to eat them.

    I love the cranberries but I have just tasted them in sweet preparations, and well, they are delicious, but I am not sure if eating salty preparations is nice to me, but no pain no gain haha, I have to experience this for myself and well, it is a good option, thanks for sharing the recipes I hope to find more soon

    All the berries are so delicious and you can prepare so many things with them, combine them, make red fruit jelly or anything you like and if you consume fresh, you take the advantages of the vitamins and minerals, very good for the skin and the eyes I think, but well that’s what I have heard

    Thanksgiving is coming up in a few days and my fiance makes this wonderful homemade cranberry sauce!!! It’s incredible how easy it is to make, and I actually like it! I have NEVER liked that canned cranberry crap, and I can’t believe people actually eat it.

    Both the salad and chicken recipes sound really great and I’ll be interested to see how these turn out!
    Another nice thing to try is a berry salad, with lots of strawberries, raspberries, blueberries, blackberries and cranberries (and perhaps with a little dollop of cream on the side for extra yumminess!). Cranberry juice isn’t so great on its own but it does make up for it with all of its great vitamins.
