Amaranth (and amaranth flour) is a dietary wonder of nature; it is highly rich in fiber, iron, vitamin A and C, as well as calcium and magnesium. Amaranth has a high percentage of essential amino acids (proteins), including lysine, an essential amino acid for human consumption and that is not found in most cereals. It is rich in healthy fats.
With amaranth flour, you can develop several dishes, especially bakery. When amaranth flour is not mixed with wheat flour, it is an excellent choice for those who cannot eat gluten (celiac).
These recipes can be mixed with wheat flour, so if you are celiac you should be cautious in this, and look for recipes where you only use amaranth flour.

I definitely want to start cooking with more amaranth. I’ve heard a lot of talk about it as of late, and I’m super interested in giving it out a try. I’ve literally never tasted or even smelled it before, but it sounds like it’s gettinga little more main stream, so I think it’s easier to find in the stores. Thanks so much!
