Amaranth Flour Recipes

Amaranth (and amaranth flour) is a dietary wonder of nature; it is highly rich in fiber, iron, vitamin A and C, as well as calcium and magnesium. Amaranth has a high percentage of essential amino acids (proteins), including lysine, an essential amino acid for human consumption and that is not found in most cereals. It is rich in healthy fats.

With amaranth flour, you can develop several dishes, especially bakery. When amaranth flour is not mixed with wheat flour, it is an excellent choice for those who cannot eat gluten (celiac).

These recipes can be mixed with wheat flour, so if you are celiac you should be cautious in this, and look for recipes where you only use amaranth flour.

Aztecs cookies


  • 2 1 / 2 cup of amaranth flour
  • 2 cups of whole wheat flour
  • 1 / 4 kilo of vegetable shortening
  • 1 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • 2 teaspoons of baking soda


  1. Beat butter until it becomes creamy; add sugar, eggs and vanilla while in another bowl stir the flours and baking soda.
  2. Stir with the above mixture until smooth.
  3. Finally, spread on a flat surface with a roller and cut the cookies to place in a greased pan.
  4. Bake at 180 ° C for ten minutes.

Cheese Bread with Amaranth


  • 125 gr. of manioc flour
  • 150 gr. of grated cheese
  • 50 gr. of amaranth flour
  • 20 gr. of quality butter
  • 2 eggs
  • 2 tablespoons of leavening powder


  1. In a bowl, mix the grated cheese, amaranth flour, melted butter, leavening powder and two egg yolks. Knead together until a homogeneous and consistent mixture.
  2. Add to the mixture two egg whites beaten until stiff and continue kneading. Put in a pudding mold, buttered. Bake over medium heat for ½ hour to get the surface gold. Once cooled, the mold is removed and cut and used as bread. The slices can be toasted or baked.

Amaranth flour tortillas


  • 200 g of amaranth flour
  • 800 g of wheat flour
  • 175 g of vegetable shortening
  • Salt to taste
  • Hot water


  1. Stir amaranth flour and wheat, salt is added incorporating well, add butter stirring perfectly well with the flour until well incorporated.
  2. Add the water slowly trying to put together the flour. Then, form little balls and extend with a roll, cook in a preheated pan until cooked on both sides.

Amaranth and corn tortillas


  • 200 g of amaranth flour
  • 800 g of corn meal
  • Hot water


  1. Combine amaranth flour with corn meal, add a little water and knead well, if you need to, add another little water.
  2. Knead until dough is manageable, compact, let stand for 10 to 15 minutes proceed to prepare the tortillas in the traditional way.

Amaranth drink


  • ½ kilo of roasted amaranth seeds
  • ¼ kilo of brown sugar
  • One cup of amaranth flour
  • Some cinnamon sticks
  • 2 liters of water


  1. Dissolve amaranth flour by hand in a little cold water. Separately in a pan, put 2 liters of water to boil, when releasing the first boiling, add amaranth dissolved, the cinnamon sticks, amaranth seeds and sugar.
  2. Constantly move it. Bring to the boil, then lower the heat. Boil 10 to 15 minutes and serve.

Corn flour based drink with Amaranth


  • 150 g. of Chocolate tablet
  • 250 g. of brown sugar
  • 150 g. of Amaranth flour
  • 1 liter of corn drink


  1. Boil Corn drink with amaranth flour dissolved in a little cold water and cinnamon, stirring constantly preferably with a wooden spoon. Bring to the boil; add chocolate previously crushed with brown sugar. Continue to move to dissolve perfectly. Beat finally with the grinder. Bring to a boil.

I definitely want to start cooking with more amaranth. I've heard a lot of talk about it as of late, and I'm super interested in giving it out a try. I've literally never tasted or even smelled it before, but it sounds like it's gettinga little more main stream, so I think it's easier to find in the stores. Thanks so much!

I love preparing sweets and cookies with Amaranth, I just prepared last week another recipe that I found in this page, and it?s amazing to find other recipes to try out and surprise my husband and my entire family even to myself! So thanks for publishing these recipes! I hope I can find more
