These dishes, in addition to be nutritive, are a delicacy for the palate. They are ideal for children and for people who like good nutrition and are demanding. Ingredients are rich in nutrients and fiber, they will help your bowels to be in very good shape, so they are recommended for people who have digestive problems or do not eat meat.

Tofu-balls

Ingredients

  • 250 grams of freshtofu
  • 2 tablespoons of toasted sesame seeds
  • 1 tablespoon of soy sauce
  • 2 medium carrots
  • 2 onions
  • Wholemeal flour (can be rice flour)
  • A bit of raw garlic, crushed
  • A little vegetable broth
  • Extra virgin olive oil
  • Sea salt
  • Pepper

Preparation

  1. Crumble tofu into a bowl, chop the onion.
  2. Cook the carrots (not much), and then chop into very small parts.
  3. Now add onion, chopped carrot, sesame and soy sauce to tofu and mix well.
  4. Form the meatballs with the mixture, cover with flour and fry in a skillet.
  5. For the sauce: chop vegetable and fry in oil with whole wheat.
  6. Then add the broth and pepper.
  7. Finally, pour the sauce on the meatballs and serve.

Oatmeal-balls

Ingredients

  • 2 cups of instant oatmeal
  • 1 cup of ricotta
  • 1 egg
  • 2 tbsp. of chopped parsley
  • 1 tbsp. of diced red pepper
  • 1 / 2 tsp. of salt
  • 3 tbsp. of oil
  • Tomato sauce to accompany

Procedure

  1. In a bowl, mix all ingredients.
  2. Form meatballs and sauté in hot oil, remove and let drain on absorbent towel.
  3. Serve with tomato sauce.

Vegetable-balls

Ingredients

  • 350 g of cooked spinach
  • 150 g of cooked carrot
  • 150 g of mushrooms
  • 150 g of finely chopped onion
  • 1 clove of garlic, minced
  • 1 sprig of parsley
  • 2 eggs
  • Bread crumbs
  • ¼ L of milk (can be soy)
  • Wholemeal
  • ½ L of sunflower oil

Preparation

  1. Boil the vegetables and chop them finely.
  2. Fry onion and garlic, add the chopped mushrooms and mix with the cooked vegetables.
  3. Soak the bread crumbs with hot milk.
  4. Mix the soaked bread crumbs, eggs, parsley and vegetables to form a compact mass.
  5. Make balls, cover with flour and fry in sunflower oil.
  6. Serve with a tomato and red pepper sauce.

Eggplant-balls

Ingredients

  • 200 grams of eggplant
  • 200 grams of zucchini
  • 50 grams of onion
  • 1 clove of garlic
  • 2 tablespoons of bread crumbs
  • 1 sprig of parsley
  • 1 egg
  • Whole wheat bread crumbs
  • Salt
  • 250 grams of tomato sauce

Preparation

  1. Grind the eggplant with zucchini, all raw, using a blender.
  2. Fry the onion and garlic brounoisse cut (chopped into small squares) and once sautéed, add eggplant and zucchini.
  3. Put a pinch of salt and let cook for 20 minutes.
  4. Once cooked, place mixture in a colander to remove all the juice.
  5. Mix the drained mixture with egg, bread crumbs and parsley.
  6. Make the balls and cover with bread crumbs.
  7. Fry the meatballs in a pan with hot olive oil.
  8. Drain them with kitchen paper and introduce in a casserole with tomato sauce where you should cook for 5 minutes at a simmer.

Potato-balls

Ingredients

  • 1 kilo of boiled potatoes
  • 2 eggs
  • 1 tsp. of salt
  • 1 pinch of nutmeg
  • Bread crumbs
  • 1 slice of bread
  • 100 grams of ham
  • 1 / 2 teaspoon of olive oil

Preparation

  1. Boil the potatoes with salt.
  2. Once they are soft, remove the skin and make puree without adding water. You can press them with a fork until the dough is smooth.
  3. Add 2 eggs, 1 teaspoon of salt and 1 pinch of nutmeg, stir until all ingredients get together perfectly.
  4. If the preparation is too soft to prepare the balls, add some breadcrumbs.
  5. Chop 1 slice of bread and 100 grams of ham, fry for 1 minute in the pan with ½ teaspoon olive oil over medium heat.
  6. Remove mixture from pan and let drain on paper towels.
  7. Incorporate it into the potato dough. Form meatballs by hand, pressing them well to prevent disarm.
  8. Cook in hot water for 1 minute, without boiling. Serve with ketchup or mayonnaise.

    Those recipes look delicious and are a good idea to make a nice lunch or dinner for my child. Children love meatballs but sometimes they can be unhealthy because of the meat and the fat, so these amazing recipes are just perfect to guide children into a healthier lifestyle. Thank you very much

    Oh great!! Thanks so much what great recipes!!! I love love love meatballs, but the truth is…I just don’t eat meat that much anymore, unless it’s freshly harvested venison or fish. I’ve been looking for different vegetarian options to add into pasta mixes and things, so this will get me off to a great start!
