It is a grain that comes from the Andes Mountains of South America. Quinoa is a plant that is grown at altitudes where corn can not grow. Although it belongs to the family of cereals but to quenopodias (beet, spinach or chard), it has been considered as such because it has been a staple for many people. The origins of Quinoa are truly ancient. It was one of the three meals of the Inca civilization, along with corn and potatoes. This makes it an excellent food accompaniments, and reinforces the value of the protein from other forms of grain (which are low in lysine), or soy (which is low in methionine and cystine). Quinoa also provides starch, sugars and fats (high in linoleic acid essential), fiber, minerals, and vitamins. Contains vitamins C, E, F and B (thiamine, riboflavin and niacin) and high percentage of calcium, phosphorus, iron, potassium and zinc, while almost no sodium. Their rates are very low calorie and no danger of the appearance of parasites or insects in the summer.

 

Quinoa has been used by NASA as a staple food for space travel austronatas its nutritional richness and balance.
