Properties and benefits of sesame seeds

Sesame is an oleaginous seed. It contains 85% of unsaturated fatty acids; 22% protein rich in essential amino acids and 5% minerals. It provides lecithin, a phosphorous fat that is a great nutrient for brain cells and optic nerves. The fatty acids that it contains, keep the blood flowing, which helps to dissolve the bad cholesterol. Sesame is rich in calcium of excellent absorption. 100 grs. whole sesame seeds contain 1500 mg. Calcium easily assimilated, overtaking whole milk containing only 120 of very low assimilation. It is the best preventive of osteoporosis. It also contains iron, phosphorus and magnesium and vitamins B3 and E (a natural antioxidant). For all the nutrients it contains, it becomes an energizing, defatiguing, and preventive in cases of mental and nervous exhaustion. Sesame promotes the best cerebral oxygenation and by fluidizing the blood it becomes a preventive of arteriosclerosis.

The ideal is to consume the raw and ground seeds or to toast them slightly. The fatty acids are altered by the effect of heat. The grinding favors its absorption. It is very difficult to chew them well until they are transformed into a fine powder. If they are not crushed, they are not well assimilated and are eliminated by fecal matter. Once ground, they should be consumed in the day or at the most in two to three days, since they are easy to oxidize. The recommended quantity is 2 tablespoons daily of ground whole seeds. They can be sprinkled both on fruits (except citrus) or on salads or whole grains to replace the grating cheese.
