Properties of green tea:
Green tea comes from the same plant as black tea (Camellia sinensis), and is obtained by drying the leaves per share vapor (Japanese system) or warming (Chinese system). These processes hardly alter its chemical composition. Green tea leaves are fermented not after harvest and before the drying process, to retain the active ingredients of the plant (polyphenols). Many of them have been studied in cancer prevention by its antioxidant capacity. Among them they are: flavones, isoflavones, flavonoids, catechins and tannins. The polyphenol content varies in different plants. Green tea contains four polyphenols, commonly called catechins.

Traditional Uses: psychophysical asthenia, diarrhea. Especially green tea rich in catechins, as an adjunct in the treatment of overweight is also used.

More information: Green tea has recently become popular in the United States, but it has been enjoyed in the Far East for more than a thousand years, especially in Japanese tea ceremonies. The leaves used for green tea are initially the same as those that make black and oolong teas, but they are steamed right after being picked, so they stay green. Hot Tea by the Cup: Place one tea bag in your cup. Pour very hot (just at the brink of boiling) water over the tea bag. Cover and steep 3 minutes. Remove tea bag and add lemon and/or sweetener if desired. Traditionally, green tea is served without milk.

Iced Tea by the Pitcher: Pour 2 cups of very hot water over 4 tea bags. Steep 3 minutes then remove the bags. If desired, stir in your favorite sweetener while the tea is hot. Add 2 cups of cold water and chill.
