Spelt is a grain currently recommended by many therapists to observe the rapid improvement in their patients when substitute wheat or wheat flour with spelled, which is a variety of wheat that has been cultivated for about 7,000 years.

This cereal is known in some places as green or wild wheat, because of its appearance and intense flavor. It has high nutritional value and the kitchen is a noble ingredient which can make bread, biscuits, meal, flour, beer, soups, desserts, casseroles, salads and so on. It tastes mildly sweet and very nice. Like wheat, gluten, so it is contraindicated for people with gluten intolerance (celiac). With regard to common wheat , spelled has a higher level of protein, minerals , vitamins and trace elements , and contain all eight essential amino acids, making it an excellent alternative for vegetarians. Also contributes magnesium, iron, phosphorus, vitamin E, vitamin B and beta-carotene, fiber, among other things.

German spelt bread

Ingredients

  • 200 gr. of grain spelt
  • 5 g. of mixing grain ( sesame , dill , hemp )
  • 300 gr. ofwheat flour
  • 42 gr. of yeast
  • 50 gr. Of oil
  • 250 gr. of warm water
  • 1 teaspoon ofhoney
  • 1 teaspoon of salt

Preparation

  1. Put in blender spelt, sesamemixture and yeast.
  2. Crush and then add all other ingredients.
  3. Place the mixture in an oven mold .
  4. Let the mixture stand until fluffy twice its volume (approx. 20-30 min ).
  5. Bake at 200 degrees, 45 minutes.
  6. Remove from oven and let cool.

Tangerine muffins

Yield: 12 servings

Ingredients

  • 1 or 2 sweet tangerines
  • 1 cup of brown sugar
  • 1 large egg
  • 1/2 cup of milk
  • 100 grams of melted butter (or 50 grams of butter and 50 g. of applesauce )
  • 2 cups of spelt flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda

Preparation

  1. Wash thoroughly under running tangerines.
  2. Dry them and cut them into pieces.
  3. Put them in a blender or grinder along with sugar.
  4. Process them until well ground and mixed.
  5. Add the egg, milk and melted butter and process again a few seconds .
  6. Place dry ingredients in a bowl and mix.
  7. Add to the liquid ingredients and combine gently, without stirring, until all ingredients permeate. No matter if there are small lumps in the batter.
  8. Divide into 12 small molds for muffins or pancakes, previously greased with oil or butter and lined with baking paper.
  9. Bake in preheated oven at 200 ° C for 15 minutes.
  10. To check if they are cooked, prick with a toothpick the center of one of them, which should come out dry.
  11. Let them cool. Garnish with a walnut or almond.

Spelt hamburgers for children

Ingredients

  • 500 gr. of raw chicken breast and ground
  • Bread crumbs soaked in milk and drained
  • One cup of sprouted buckwheat
  • 100 gr. of chopped ham
  • 1 egg
  • Salt
  • parsley

For the béchamel:

  • 1 chopped onion
  • 1 shallot, minced
  • 1 tablespoon of spelt flour
  • 1/2 liter of milk
  • olive oil
  • salt
  • nutmeg

Preparation

  1. Sauté the onion, shallot and spelled a few minutes.
  2. Add the tablespoon of flour, salt and nutmeg.
  3. Finally, add the milk.
  4. When it starts to boil, reduce heat and let simmer stirring constantly.
  5. In a separate mold, mix all the ingredients of the hamburger.
  6. When well blended, add the bechamel.
  7. Integrate all ingredients well.
  8. Shape the dough like burgers
  9. Roll the hamburgers with some spelt flour and then fry in hot oil.
  10. Serve with salad!

Rustic spelt bread

Ingredients

  • 300 grams of wheat flour bakery
  • 50 g of spelt flour
  • 150 g of water
  • 1 tablespoon of olive oil
  • means of baker's yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 100 gr of sourdough

Preparation

  1. Make a volcano with the flour, sugar and salt.
  2. Mix everything and add the warm water with the yeast dissolved in it.
  3. Knead for about ten minutes, until dough is smooth and elastic.
  4. Add the sourdough continue kneading for another ten minutes.
  5. Prepare an oiled bowl and let it dough covered with plastic wrap.
  6. Place in a warm place until fluffy double.
  7. To degas the dough, make cuts with a sharp knife and placed on the cookie sheet.
  8. When folded back the volume is introduced into a preheated oven at 200 degrees for about 50 minutes, or until the bread is cooked.
  9. It is then removed and allowed to cool on a rack.

Spelt cream

Yield: 2 servings

Ingredients

  • 1 tbsp of spelt flour
  • One cup of sprouted buckwheat
  • ½ cup of milk
  • ½ teaspoon of salt
  • 3 teaspoons of sugar
  • A clove of garlic
  • A tomato
  • A piece of onion

Preparation

  1. Soak the buckwheat for 12 hours.
  2. In the blender, combine spelt, tomato, garlic clove, spelled flour, milk, salt and sugar.
  3. Boil all together for 5 minutes.
  4. Serve hot.

    I am not a really huge fan of this kind of wheat but it is a good variation if you want to have a healthier diet if you just try something new, like those recipes, the cream, for example, looks pretty easy to prepare and very delicious too, so I am going to prepare it right now!

    Oh wow! I’ve never seen any recipes before that acutally use spelt, this is really cool. The recipes look pretty straight forward, but are there any suggestions for beginner bakers? Tips we might need to keep in mind, perhaps? Thank you!
