Ingredients
- 200gr. of cream cheese
- 1 cup of cream
- ¼ cup of Chopped walnuts
- ½ tsp. of salt
- 1 tsp. of Lemon juice
- 2 cups of lychee
- 3 tbsp. of basil
Preparation
- Whisk or blend a cup of lychee with the cream cheese, salt, lemon juice and cream until well blended and creamy. Add a little water or juice to lighten the preparation if necessary.
- Place in a mixing bowl and add the chopped walnuts, the rest of the chopped lychee, basil and mix until fully integrated.
- Serve to accompany crackers, vegetables and fruits, etc.
Lychee Summer rolls with prawns
Ingredients
- 1 ½ cup of lychees (peeled and seeded)
- 200 gr. of Rice Noodles
- 15 sheets of rice
- 3 tbsp. of fresh mint
- 300 gr. of Shrimp or prawns
- 1 red pepper
- 2 carrots
- 2 cucumbers
- 3 tbsp. of oil
- Salt and pepper (sufficient amount)
Preparation
- Soak the rice noodles in hot water for about 15 minutes, drain and set aside in a little cold water to prevent drying.
- Clean the shrimp or prawns and sauté in oil with salt and pepper seasoning.
- Chop the cucumber, carrot and bell pepper into strips and set aside.
- Pass rice sheets through soft water one by one and place the filling ingredients inside (lychees, carrots, cucumber, noodles, prawns, peppers and mint) Place at one end and fold the edges, being carfeul that they are sealed.
- Serve with sweet and sour sauce or soy sauce.
Fish with lychee and lemon tea
Ingredients
- 500 gr. of Fish (sole, sea bass, etc.)
- 1/2 cup of macadamia nuts
- 1 cup of sesame seeds
- 1 bunch of lemon tea
- 1 cup of lychees, peeled, seeded and chopped
- 2 tbsp. of Lemon juice
- 1/4 cup of Coconut milk
- 1/4 cup of Cream
- 400 gr. of Spinach
- Salt and pepper (sufficient amount)
- 4 tbsp. of Olive oil
Preparation
- Heat the cream and coconut milk with bunch of lemon tea, infuse for about 10 minutes and remove lemon tea.
- Mix coconut milk infused with lemon juice and lychees. You can season with a little salt
- Grind the macadamia nut or chop finely and mix with the sesame seeds.
- Cut the fish, season with salt and pepper and cover with the mixture of nuts and sesame seeds.
- Seal in a pan with oil and finish cooking in the oven for 5-6 minutes.
- Clean and drain the spinach, then cooked in oil and season with salt and pepper.
- Place the spinach in the dish, the fish on top, cover with sauce and serve.
Lychee Pancakes
Ingredients
- 1 cup of margarine
- 1 cup of sugar
- 2 eggs
- ½ cup of Orange juice or lychee juice
- 1 tsp. of Vanilla extract
- 2 cups of Wheat flour
- 2 tsp. of Baking powder
- 1/2 tsp. of salt
- 2 cups of lychees (peeled and seeded)
Preparation
- Sift the dry ingredients (flour, baking powder and salt) into a bowl.
- Cream the margarine with the sugar and add the vanilla extract and eggs little by little.
- Gradually add the mixture to the dry ingredients and orange or lychee juice.
- Integrate well and add the lychees, then place in a greased and floured mold.
- Bake at 180 ° C for 30 minutes until an inserted toothpick comes out clean.
