Portuguese fried cod
Ingredients
(Serves 4)
- 600 gr of fresh cod fillets
- 50 gr of flour
- 1 / 2 cup (of wine) of oil
- 25g of butter
- Salt and pepper
For the sauce
- 500 gr of onion chopped very well
- 4 medium tomatoes sliced
- 1 / 2 green pepper chopped
- 3 cloves of garlic, peeled
- 4 tablespoons of oil
- 1 cup of Madeira
- 10 pitted black olives
- Salt and pepper
Development
- Start preparing the sauce. Heat oil and sauté onions until they are almost broken. Add the garlic, lower the heat and leave until the mixture is golden. Add the peppers and tomatoes and cook slowly 20 minutes, then add olives, wine, salt and pepper, and cook uncovered 10 minutes more.
- Meanwhile, cut the cod into pieces, and add flour, salt and pepper. Heat oil and butter and fry until golden brown. Serve with sauce on top.

It’s strange to think that different culture have such different ways of preparing the same foods that we eat! They just eat them in different ways!! I’d really like to try this recipe in a local, Portuguese restaurant, because I’m sure it would be so much more different than me following this recipe and making it at home.
