The year-end's festivities are fast approaching and for many people the gaining of a couple of kilos. During this time, food plays an important and leading role and almost no one can resist these delicious preparations.
Making a delicious but healthy menu is a challenge that we hope to make easier with these recipes perfect for all the December dates: healthy, nutritious and easy to prepare.

Pineapple salad with walnuts
Ingredients
- 1/2 Pineapple
- 2 tbsp. of Walnuts
- 1 cup of Low -fat plain yogurt
- 2 sticks of celery
- 3 tbsp. of Dried cranberries
- Salt & Pepper (sufficient amount)
Preparation
- Peel the pineapple and chop into medium cubes.
- Chop the celery into thin slices.
- Mix pineapple, cranberries, walnuts and celery with natural yoghurt.
- Season with a little salt and pepper, refrigerate before serving.
Baked ham and lettuce rolls
Ingredients
- 8 slices of turkey ham
- 1/4 cup of Grated Manchego cheese
- 1 cup of Tomato sauce or tomato puree
- 3 tbsp. of Light cream cheese
- 8-10 lettuce leaves
- Salt & Pepper (sufficient amount)
Preparation
- Boil water and put lettuce leaves in water with a little salt to soften, drain carefully and spread them on a flat surface.
- Fill lettuce leaves with ham and roll up, place in a deep oven-proof container lightly greased with a little oil.
- Blend cream cheese with tomato puree or sauce, add salt and pepper and mix together until a creamy sauce is formed.
- Pour the sauce over the rolls and sprinkle with cheese.
- Bake at 180 ° C for 20 minutes until the cheese melts.
Turkey in pineapple sauce
Ingredients
- 1/2 kg. of Smoked turkey breast
- 1/2 cup of Pineapple juice
- 3 tbsp. of honey
- 1 tsp. of Chipotle sauce
- 2 cups of chopped pineapple
- 2 cups of chopped papaya
- 1/2 Onion
- 2 serrano chilis
- 3 tbsp. of coriander
- 2 tbsp. of Lemon juice
- Salt & Pepper (sufficient amount)

- Slice the onion and finely chop the serrano chilis, you can remove or leave the seeds.
- Mix pineapple, chopped papaya, serrano chilis and onion in a bowl and bathe with lemon juice, season with salt and pepper.
- Develop a simple glaze with pineapple juice, honey and chipotle. Heat until reduced and thickened slightly.
- Dip turkey in the sauce and serve with fruit. This dish can be served with a simple salad.
Peach and Berry Dessert
Ingredients
- 4 Peaches
- 1 cup of sugar
- 2 star anises
- 1 stick of cinnamon
- 1 vanilla bean or 1 tsp. of Vanilla extract
- 200 gr. Red fruits: strawberries, raspberries, blackberries.
- 4 cups of water
Preparation
- Boil two cups of water and place the peaches in it, leave in the hot water for about 2 minutes, drain and cool.
- Remove the skin when the peaches have cooled.
In a saucepan, add the remaining two cups of water and add the star anise, cinnamon and halved vanilla pod. Bring to the boil and leave for about 5 minutes. - Lower the heat and let the peaches simmer until they are tender and slightly thick and syrupy.
- Serve with berries, syrup and a dollop of Greek yogurt.

Amazing recipes! The people is very used to the traditional foods of this season and they just forget that they may be variations and this is always good to change a little, I feel that this is a very good idea and healthy too, as the traditional food tend to have many sugar and fat.

Christmas is a very good moment to enjoy with your fmaily and your friends and of course enjoy a nice meal with everything different from normal sinc eit is a very special day, so the combination of food and the ingredients you use are different and that gives that nice touch, I find those recipes perfect with that unique christmas touch!

It is a little bit late but a good opportunity still to have nice dinner of all those recipes, and that would be awesome, because I like enjoying the different traditions in other days, that is even special, so now I would like to do this, and I hope to do that soon!

Great alternatives to those traditional high-calorie meals with which we pack on the pounds during the Holidays! These are also great to make for other Season’s as well. For example, the Peaches and Berries is a great for a Spring dessert.

Thank you!! I think so often people think that just because it’s the Holidays, they have a free card for eating all sorts of traditionally terrible food that is fattening. People gain so much weight over the holidays, and its ridiculous!! I definitely support the effort to stay healthy during Christmas. Thanks so much!

These sound great, but not for Christmas haha! Call me traditional, but I love turkey with all the trimmings, and who cares if you gain a few pounds? In the North anyway, Winter is for keeping warm and eating good (fatty) foods with family and loved ones. I’m sure these recipes would go down a treat in more southern countries like Spain, Portugal, Greece, etc. but here it is a nice treat to eat fatty food for one day in the year.
