Avocado Gazpacho

Gazpacho

Ingredients

  • 3 avocados
  • ½ zucchini (optional)
  • ½ cucumber
  • a piece of green pepper
  • 1 clove of garlic
  • 30 gr. of bread crumbs
  • some sprigs of chives
  • water
  • extra virgin olive oil
  • vinegar
  • salt

For the garnish:

  • 100 gr. Of ham
  • 1 tomato
  • ¼ red pepper
  • 2 eggs cooked
  • several slices of toast

Development:

  1. Put the bread crumbs to soak in a bowl with a little water. Cut avocados in half, remove the bones, and cut while peeling. Clean the zucchini and peppers, cut and add to bowl. Peel the cucumber and garlic clove, and addl. Cut also some branches of chives and incorporate. Season, pour a dash of vinegar and a little more water and crush with a mixer. If it is very thick, pour a little more water. Add a little oil, mix well.
  2. Peel the tomatoes and cooked eggs and dice. Cut also the red peppers. Serve in a bowl. Cut the ham into thin slices, put them on a plate and put beside slices of toast. Serve the gazpacho and accompany with the garrison.

    Avocado gazpacho!! I think I may have had this once at a work potluck, and if I’m thinking of the same thing it was amazing!! I’ll have to try the recipe out and see if it’s what I really had then, because if so,…I’ve been looking for this recipe for YEARS!! Thanks so much, I can’t wait to try it out!
